Ailsa Bay Release 1.2 Sweet Smoke is single malt whisky that has been scientifically distilled to achieve certain characteristics in this case they have sought to attain the perfect balance between sweetness and peat smoke. In order to achieve this they have distilled this expression so that the peat ellement is 022 PPM and the sweetness is 019 SPPM: they are the first distillery to develop a measure for sweetness expressed as SPPM sweetness parts per million. The whisky is matured using a Micro maturation process, where the whisky is distilled in a range of smaller casks including Bourbon, Virgin, First Fill and refill American Oak Cask, the smaller casks enable intense rapid maturation. The result is a whisky that has the perfect balance between sweetness and smoke.

Fresh wood smoke with notes of smouldering damp heather and an extinguished bonfire. Following the smoke is a wave of oaky sweetness, vanilla oak and candied orange peel.
Beautifully balanced peat and rich vanilla oakiness, meandering between smoke, fruit and creamy toffee.
