GlenWyvis, a community-owned distillery nestled in the Scottish Highlands, has released its third single malt. Located in the valley of Ben Wyvis, the sustainable distillery harnesses its own green power source. However, a fire in the fuel store of its biomass boiler towards the end of 2019 had significant repercussions for the year’s output. Despite this setback, the GlenWyvis team demonstrated remarkable resilience. They combined winter and summer runs of concerto and laureate barley, allowing them to mature in a unique blend of red wine, Moscatel, and marsala casks. This innovative approach resulted in a youthful malt with delightful notes of sweet fruit and spice. It heralds promising developments from this young Highland distillery.
