At their peak, the grapes are hand-harvested, destemmed, crushed and vinified through careful maceration. Permanent pumping-over during fermentation enhances the process. This takes place in stainless-steel vats at a controlled temperature of 16-18°C until the desired Baume is achieved. Grape brandy is then added, creating a fortified wine. The wine’s maturation and source influence its ageing in stainless steel and wood for a minimum of three years. This results in a rich aromatic wine with a balanced sweetness.
