The vinification process involves a slight maceration and extraction of colour and aromas from the grape skins, followed by pressing before fermentation. This slow, continuous process takes place in stainless-steel vats at low and controlled temperatures (16-18°C) to maintain a fresh and aromatic style. Fermentation is interrupted by adding grape brandy, creating a fortified wine. This is achieved by blending wines of varying maturation levels and origins. The resulting blend is aged in stainless steel and wood for a minimum of three years, developing a rich and balanced flavour.
75cl at 19.5% alc/vol.
